I am making a wedding cake for tomorrow. The bride wants chocolate buttercream in a dark choc. brown color. Her colors are choc brown and pink. I made the chocolate BC dream recipe and have added a ton of brown and some black color, but I can't achieve the color I want. Now I have like 15 cups of choc BC Dream, but not in the right color! HELP!!!!
I think it might turn darker overnight. I've seen a dark cocoa - I think it was by Hershey? Perhaps you can add some of that?
Dutch Process cocoa (in any chocolate BC recipe) will make a darker chocolate icing. The only other suggestion I have won't do you much good right now, unless you have a good cake supply store near you, since you're on a tight timeline. I have found that the Americolor colorings really work well, especially the Super Black.
I definitely agree with the suggestion to let the icing sit for at least several hours to darken.

beachcakes is right. Hersheys just came out with a new product. " Hershey's Cocoa Special Dark". I just used it to make my chocolate buttercream and boy did it turn dark. Also, you don't need to add as much of it as you would your regular Hershey's Cocoa. ![]()
I agree with zubia, but I've never tried the new Hershey's. This is the recipe I use... http://www.cakecentral.com/cake_recipe-1941-6-My-Easy-Chocolate-Buttercream-Frosting.html... and it gets darkest if you use chocolate squares rather than regular cocoa.
Try Toba Garrett's Chocolate Buttercream icing, www.epicurious.com, it is to die for and it is pretty dark. It has chocolate ganache and dutch processed cocoa in it, definitely worth the effort, the taste is phenomenal.
I agree with Miss Robin .I tried this recipe and every one loved it .I substitued Alcohal with chocolate syrup.I have been looking for dark cocao powder but no such luck yet.

I just found some Hershey's Special Dark Chocolate Cocoa at Walmart the other day, you might try there if you have one close. Otherwise there are several places on line to order.
