Which one is best for covering a dummy?

IMO, fondant. Wilton fondant is excellent for covering dummy cakes.

Gumpaste is great when you want something to be really thin. It dries really quick so I would not recommend it for covering a cake. GP is great for flowers, you can get it very thin and because it dries quick it will hold its shape while drying. Wilton fondant is best for dummies since it is easily available and it is easy to work with. (Not to mention it tastes NASTY!)

I'm sure the gumpaste would work well if you work with it quickly, but am not too sure about the MMF's longevity. My dummy cakes are covered with Wilton fondant and they've held up excellently...and come to think of it, I've covered some in Satin Ice, too, which works great too.

The fondant will get rock hard in a couple of days.

Not all fondant gets rock hard... I have some Im still waiting for it to get hard its been weeks...different brands dry differently, just keep that in mind with what ever you are trying to achieve.

Thank You all! I just made the Nicholas Lodge gumpaste, turned out great. It's in the frigde now, what is the minimum amount of time That I can let it rest? Can I start using it tonight?

I really can't make it to my cake supply store to get fondant and I don't have and can't find the glucose I need to make it. I only have the gumpaste, mmf and tylose; which would be better for the dummy all gumpaste or mmf w/tylose?
