I'm making a box lemon cake with the following extender:

1 cup flour
1/2 cup sugar
1 tsp vanilla
1 tsp baking powder
1 egg
1/2 cup water

Should I add a lemon pudding as well to make it more flavourful or will it make it too heavy? ANY SUGGESTIONS ARE GREATLY APPRECIATED!!!!

TIA!!
Chrissy

I would try it and add the lemon pudding since it does help strengthen the lemon flavor, it will make it a little more dense, but so will the extender I think.

I would check to see if the cake mix already has the pudding in it and then decide if you want to add more. I use an extender close to that one for a strawberry cake that I make, and it is great without the pudding, but if you wanted to try it, I don't think it would hurt.

You could replace some of your liquid with lemon juice, and I always add a little lemon zest in just to give it a little kick!
