i am going to attempt my first batch of mmf this weekend. i want to make some black and some red. for a batch of black (or red) am i going to be using and entire bottle of americolor super black (or super red)????? and, can i just ad the color to the melted marshmellows before adding the sugar? less work than kneading it in later.
yes you can add it to the melted marshmallows, but I wouldn't use a whole bottle it would probably been too wet. I would start out with less and add more if you need it.
I don't like the MMf, but it would be alot easier to add to the marshmellows first, you'll have to experiment with the amount as it varies with the quantities of mix you have. You could also buy the Wilton already black and red fondant and use it when you have these colors. Saves on you using up all your colors.
I just made some black MMF, It was a CHORE, didnt add the color to the marshmellows added it after I put in the powdered sugar, it took forever so I would definatly add it before if you can. I was using the wilton colors though and have heard that the americolors are soo much better. I did get it black though and it seemed to darken alittle after it set for a couple of days. Hope that helps.
Dont bother with the colors when you can make black mmf with dark cocoa! I did this accidentally and I did not need to use any additional black. See this old thread on the subject. Scroll down for my post a little ways and it will tell you the details. I also attached a pic of it in case you are skeptical!

Also some people have used red jello to make red mmf, but i heard it is a little sour. but if you only need a little, it might do the trick.
Another great way to make dark MMF is airbrushing it after it's on the cake. I did that for the flannel shirt cake because when I tried to make the MMF that dark with food color it tasted NASTY!! But when I airbrushed it, it turned a nice dark red without any taste.
