Convection Oven?

I've been saving my money for a while to purchase a new oven. I currently have a gas oven. I was thinking of getting a convection oven with a gas range. For those of you with convection ovens, do you like them? How are they when it comes to baking cakes.

not much help here... I did just buy a new range.. it has a double oven with convection in the large oven I used it to make a blackberry cobbler and it worked great.... but I have been to busy doing the remodel on the kitchen to bake any cakes so I have no idea but I can't wait to try a turkey.


What I want to do is bake a batch of cookies... 3 sheets at a time sound wonderful

I have a convection oven. If I am not mistaken, it says not to use it for baking cakes, etc. I just use "bake" with my cakes. I will say that I love the convection feature with most everything else. It is fantastic when you are cooking a turkey or ham and don't want to tie up the oven all Christmas or Thanksgiving Day icon_lol.gif If you get one, be sure you can use traditional bake feature as well as convection. I am shocked to read that you aren't supposed to bake cakes in a convection oven- That is all the bakery I worked at used. Hmmm very interesting since I too have been saving my money for one- Love to hear from others who may have one????

I have a convection oven but I do not use the convection setting for cakes. I did for a while but found that the cakes just did not bake right. The biggest problem I had was the crumb being full of holes, my cakes would look like a Swiss cheese. But apart from baking I use the convection all the time, it really cuts down on cooking time and it is great being able to cook several items at once on different racks.

I have a domestic oven so I do not think it is a true convection oven like a commercial oven would be.

I bought a Maytag with convection. I have only used the convection bake option. My cakes bake very similar to what my other oven baked them? I am going to try it with just the bake option and see. The reason I bought it was I thought i'd beable to bake more cakes at a time, but found that wasn't an option. It is great for baking 3 pans of cupcakes at a time or 3 sheets of cookies.

Ditto on the convection...... don't use mine for cakes, but it's wonderful on everything else!!

I am sure the convection oven I have in my home is nothing like one used in a commercial bakery. I still love it though.

I just got a convection oven at home with the smooth top at the beginning of May. I LOVE it and I use the convection feature all the time to bake cakes. I haven't had any problem with the cakes when I use it. I lower the temp and reduce the baking time. I love it for making cupcakes. I was able to bake 4 trays of cupcakes at a time - two on each shelf for a total of 72 at a time. No problem with the way they came out.

SARAH SAYS:
Cakes do not bake well in a convection oven. They are best baked in a conventional one. For best baking, professional chef's recommend an electric oven with gas burners, but I use my all gas oven without any problem.

There is also alot of discussion about "true convection ovens" on the internet.

I got a new stove for Mother day it arrived a little late just 9 days after our 3rd son!

I tried the convection for baking some cupcakes and I got cupcakes that looked like baseball caps.
The warm heat gave all the cupcakes a lip on 1 side.
It works fine for cookies and other stuff, just not for cakes they are too soft.

Thanks for all your replies! I didn't know that you could turn off the convection with some ovens. I've been doing some research & read that in order for the oven to be a "true" convection, it must contain 3 fans. I have read both negative & positive on baking cakes in them. They're supposed to be great for pastries & cookies. I currently have a gas oven and haven't had any problems with it. I just love the fact that a convection cooks so much faster.

I bought a Convect-a-ray oven ( I think the company is Delux ovens in Florida) WHich is part convection, part raident(sp?). Developed expecially for cake baking. They always have ads in Amer Cake Dec Mag. True convection has too much air flow and moves the batter. I can bake 4 full sheet pans at once and a whole entire wedding cake in an hour!

I have a Frigidaire Professional Series convection oven and can't say enough positive things about it. I got it in Dec '05. I haven't used the true convection part of the oven yet though.
It has a button labeled "convection convert" and this is what I bake all my cakes with. If I press in "350" for baking a cake and then the "convection convert" button, the oven adjusts the temp automatically. The cakes bake perfectly.
To get rid of the holes in the cake I just tap/bang the pan on the counter.

edited to say": Actually one small difference I noted between mine and the link I provided. Mine doesn't have 4 convertable burners, it only has 1 that converts from small to large burner, and mine has a "warming" spot on the cook top that is great for melting chocolate. So maybe mine is the version right before this one, but beyond that, the baking features are the same.

The one I have is a 30" slide-in range. All the controls are in the front just above where the handle to the oven is. It has a black smooth top with 4 small and large burners (obviously 2 on the left; 2 on the right).
The model number is "PLES389ECB". We bought this one because it vents out the front instead of needing a hood, etc.
