Buttercream Drying Out

I have an order for a thanksgiving cake. She wants a buttercream basket weave and wants to receive the cake on Wednesday morning(the day before Thanksgiving). That means I will have to either wake up REALLY early on Wednesday morning to finish the weave or have it sit from Tuesday night to Thursday.

What should I do? Won't the buttercream and cake dry out from Tuesday night to Thursday night? icon_sad.gif

If you store it in an air tight cake container it should be ok. If your cake is large you may want to purchase a clear storage container, flip it upside down and put the cake on the lid, snap it shut and the cake should be fine.

Even sitting out (without being in a storage container) your buttercream will not dry out. I've done cakes 2 or 3 days ahead before without absolutely no problems.
