I am entering a cake contest and I am making 2 cakes - how long in advance can I make the cakes or how long in advance SHOULD I make the cakes.

styrofoam dummies can be made months in advance. You have to keep it comvered (in a box) to prevent dust, and away from bright light that might fade the colors. Otherwise, sooner is better-less stress.

I love making styrafoam dummy cakes! They're light, they're always level, they never bulge or ooze, never lean, and never collapse. thumbs_up.gif

What do you cover your dummies with? Can you use your regular buttercream, or do you you use royal or only fondant to decorate with?

If you use a crusting buttercream it will firm up enough to move around fairly safely. There is always the risk that when you bump a buttercream cake dummy, that it will be marked.

Be sure to use one that isn't perishable, protect the finished cake from dust and bright sunlight.

So, it's best to use fondant or royal icing? They would dry to a hard finish right? icon_confused.gif
