the cross and flowers are lovely.
The only thing i would say is to practice writing (I have to too, and i think yours is still better than mine) maybe just start closer to the middle so there is plenty of room so the longer words don't get squooshed together.
The teachers cake looks great! Your writing needs a little practice I think, but my writing is awful, so you may not want my advice!! I was told that Wilton has letter press sets, I've never tried them. Your icing looks nice & flat though and your border looks perfect. It's hard to see your first cake really well, but from the top view the swirl effect looks nice....is it supposed to have specks in it? I've never tried the swirl effect before so I don't know much about how it's supposed to look. ![]()
Is that strawberry swirl the frosting or the batter? It looks neat.
The only critique I would say (And it is a pretty mild one) is maybe use a straight-edge when you do your writing....that way it will stay level. The handwriting itself is good (I can't do the "PP" in happy and make it look right EVER!). This way though your spacing should stay more even and it will be level. Maybe just mark along the straight edge every inch with a toothpick dot, to help with spacing. And then aim for and hit that dot as you write your letters/words.

the strawberry swirl is in the frosting. it's sugar free frosting(box mix
) so i added sugar free strawberry preserves to it to give it some flavor and color. it was way to thin to pipe or even spread. had to do a pour over, like you would with petit fours...not my favorite icing. i think i'll try something different next month. my hand writing definately needs help. i guess that's what happens when you don't get enough sleep the night before and end up drinking a pot of coffee before you frost a cake...LOL. lesson learned... ![]()
That second cake is so smooth and the shells are great! The writing will just take lots of practice, that is, if you intend to continue to do it freehand - which I almost never do! One trick is to use a piece of string - could be dental floss or sewing thread - and lay it across the cake so you can get a visual line. Then pipe in your letters and move the string as necessary. Or do like me and use a kopykake projector, then you can use all kinds of fancy fonts found online or in word. There are some girls here on cc who have absolutely AMAZING writing and they say that they use royal icing and pipe it onto a piece of wax paper with the font that they want underneath. Then when it dries just carefully pick the letters up and place them on your cake. I have done this with chocolate and it works very well. But your cake does look GREAT!
thanks to you all for the compliments and the ideas. i can't take credit for the smooth icing. i can't for the life of me remember who it was, but a fellow CC member had an amazing tip that worked, i now use it all the time. take a sponge roller, the kind you paint walls with, and when the bc has crusted, about 15 mins. roll over the icing very lightly, it works great. i'll probably never go back to the viva method, the roller is wonderful. like i said, i can't remember who the CC member is, but i would want to thanks her/him so much for the very valuable tip. ![]()
