i'm doing a 4 or 5 tier square wedding cake. i've never done a square stacked construction. i was wondering what to use besides the dowels as supports. on one site they had "cake drums" it sounded like they used them for support but not sure. any help would be great!

a drum is a thick board for the base of the cake.

Square cakes are stacked exactly the same as round cakes. I use 4 wooden dowels and I always use plastic plates between all tiers .... square or round.

Indydeb, four dowels per tier, really? I don't use dowels any more, but I was always told the rule of thumb was diameter measurement = dowel count. Therefore an 8" cake would be supported by eight dowels; a 14" cake would be supported by 14 dowels.

Just switch to SPS.

The SPS system is on my wish list, so I have plans to switch after hearing your rave reviews on it.

BUt yeah ..... I only use 4 dowels. I cut a cake once for a bride. It wasn't my cake and the person had about 12-15 dowels in the bottom tier (12" square). The cake was like swiss cheese and hard to cut .... with all the holes, it was really crumbly!

Oh Indy, SPS doesn't have to stay on a wish list. It's cheap--as in disposable.

thanks for the replies. i have round plastic plates, so i guess they will work? what is SPS?
i wanted to be able to remove each layer individually to cut, will i have to get the round plates to be as close to the size of the square as possible?

To use a round plate under a square cake, then yes ghet it as close to the size of the square as possible and of course, use a square cardboard.

SPS = Single Plate System by BakeryCrafts. There have been numerous discussons about it on CC, so search should turn up lots of info.
