Have you used lemon juice/extract to flavor your BC icing? If so, does it help cut down the sweetness some and most of all, does it taste good?

Just wondering before I try it icon_rolleyes.gif

Yes, you can use lemon extract plus some grated lemon zest to give your buttercream wonderful flavor. icon_smile.gif

It's FANTASTIC! You can also mix a little lemon curd right in with it, also fantastic!

i dont recommend adding lemon juice. use the extract. the juice did cut down on sweetness...but it just left a bad lemon aftertaste.

I use unsweetened lemon Kool-Aid powder when I want a real zing to the bc.

Otherwise, I use Creme Bouquet and/or lemon extract. icon_smile.gif

I just made lemon BC this weekend with juice and it tasted great. It would be good to add the zest too. thumbs_up.gif

If you use lemon zest, won't it speckle the bc? I'd be worried about having specks in the bc and someone having a hissyfit over it. icon_confused.gif

Cakepro, your idea of using unsweetened Kool-Aid is a great suggestion!

Hi, I'm really new here but when I saw your question, I thought I'd give you the recipe for BC that my cake instructor gave me a long time ago.
It ends up with a touch of lemon taste and mixes well with the almond. I love it and get many compliments on it.
2lb. powdered sugar
10 Tbsp milk (or 1/2 cup + 2 T)
1 cup Crisco
1 Tbsp Real lemon juice
1 tsp. lemon extract
1 tsp. almond extract (I add a touch extra)

I use both lemon extract & juice to make lemon BC... use 1tsp of each and 1 tsp of vanilla. It's great.. and not as sweet.
