Need Help With Strawberry Filling For Chocolate Cake

Can someone out there help me with a strawberry filling for a chocolate cake. My sister's husband birthday is this Sat. so she asked me to bake her a cake. I have never used fresh strawberry filling. I was planning to use the ingredients: Strawberries, sugar, cornstarch and water. I was thinking would the cake absorb this recipe? has anyone tried it? icon_rolleyes.gif Thanks, Iris

If the filling is thick enough, it will not soak the cake.

I use a high quality jam for an easier filling and it works great for me.

I made the strawberry filling and it was tasty. I made a two layered chocolate cake (Elisa Straus' recipe) with strawberry filling and chocolate bc. My family found the cake a little dry and the filling did not stick to the cake, it fell apart when it was cut. Well back to the drawing board when the time comes. icon_rolleyes.gif Any suggestions?

I use this recipe, subbing frozen strawberries for raspberries. I found the lesser amount of sugar made it seem less like jelly, which I prefered. I have gotten wonderful feedback on this recipe for both the strawberry and raspberry vesions.

Alana, on your raspberry filling recipe; when you write a T on the ingredients list (lemon juice & cornstarch), do you mean teaspoon or tablespoon? Thanks icon_smile.gif

a capital T is Tablespoons, a lowercase t is teaspoons. I didn't post the recipe, but I guess I didn't notice the abbreviations because I use the "code".
