I am faced with quite a challenge. I was asked to make a birthday cake for my friend this weekend and he wants a Devil's food cake with Mint Chocolate icing.

Here's the kicker: He hates mint extract and dark chocolate icon_confused.gif He wants a more Creme de Menthe kind of flavor, not a Peppermint one.

At first I was thinking of making a ganache, but every kind of mint chocolate candy I could find was either dark or semi-sweet, which he wont touch at all. I've been searching for Andes mint candy (which is his favorite) yet every single store I've been to has been out of them! I swear it's a conspiracy!

I was at Target today and they have Mint Milk Chocolate hot cocoa powder. I bought it and made a mug of of it to try the taste and it's like a Andes candy in a cup. Absolutely Perfect!! He'll love it!

My question is....would it work in a chocolate buttercream icing? I was thinking of adding the same amount of hot cocoa powder as I would regular cocoa powder to make a minty icing. Or is hot cocoa the wrong consitency? Any help or advice would be greatly appreciated!

If all else fails I found mint milk chocolate Pirouettes to decorate the cake with icon_smile.gif

Ok, I don't know the answer to your question but Lorann's Oils does have a creme de menthe flavor. Also, I don't know why you couldn't use hot cocoa in your icing. If you can get the flavoring, maybe part cocoa/part hot choco mix and some creme de menthe flavor. That way your icing won't be too sweet. Hope that helps. Let us know what you do and how it turns out.

I have no clue about the hot cocoa, but I have the Creme de Menthe Lorann flavoring and it is soo good, tastes just like Andes mints.

I only know one place in town that sells the Lorann oils and it's over an hour away from me icon_sad.gif Not sure if I can make it out to that side of town before the end of the weekend. I'll try to make the journey if I can!

Thank you!

I forgot, but also, the candy flavors that Michaels carries (it may be Wilton but is not Lorann's) has a creme de menthe flavor too. It comes in a box of four. Is there a Michaels closer to you?
