I have done lots of wedding cakes but never fondant. infact I have only done one fondant cake

the stupid part I just took and order for a fondant wedding cake... and worse it is on a Friday evening and I work til 5 so it will have to be ready to deliverThursday evening

AND the gumpaste flowers are nothing I have done before. We are not even sure what they are they sort of remind me of a clematis but not.. a large 5 petal flower so it should be fine

Guess my family will be eating a few fondant cakes in the next month.


so the advise part...... best fondant ????? make or buy ??

If you have never done fondant before, buy it. And for testing purposes, buy Wilton. You can get it cheaper, ususally, that the better tasting fondants like Satin Ice or others.

If We are not going to eat it.... to practice can I just take it off and do it again a few times.... I realize it will get a bit of frosting or crumbs in it but if I knead it couldn't I just roll and place it again ???


I don't have a dummy cake but would a ricekrispie cake work for practice>>

This cake has square and round cake so I need to practice both.....

The good this is the one cake I did do was great with MMF and everyone here is full of such great advise

Rice krispies will work. I have a square cake in my photos that I used for my fondant class and it is all rice krispies (the yellow bow)

As for the best fondant I would suggest Satin Ice. I order mine from www.cakesbysam.com however there are quite a few people who order it from www.intotheoven.com (great pricing and shipping rates)

I have removed fondant from cakes before that a crusting buttercream on them. I have kneaded it back into the fondant without any problems, I wouldn't save it for more than a day though as the buttercream can effect the consistency of the fondant.

I recommend SatinIce also for taste and ease of use. BUT for your practice cakes, use MMF. It's cheap and you won't cry if you mess it up.

I'm with you though - I hardly ever get fondant cake requests. People around here just like my BC and that's what I get asked for most often.

For the flowers use 50/50 premade gumpaste and Wilton fondant.

When using Wilton fondant, many times I have had to cut the edges off, too dried out. To practice covering something, just go to the Five and Dime or Michaels and get some Styrofoam blocks or round thingy......and cover with piping gel then the Wilton's.

To create a real cake, if you are not going to make your own Fondant, then use Satin Ice it has the best flavor and consistency for premade fondant (however Pettinice is fine also).

Do not use MMF for practice or the real cake. It is too spongy and will crawl/shrink on your form. (Remember it is "fake" fondant) and if they are paying for the real thing then you will want to practice with the real thing and give them the real thing.

Trust those that have used fondant before....and if you can't trust me, then trust my gallery almost all my cakes are fondant!
