I thought i'd remembered seeing this before but I can't find it. . .

How do you store prepared cake mix? I am in the process of making a wedding cake and need 1 or 2 cups more of batter for some of the tiers. I don't want to waste the rest of the batter when I can use it on the next tier. Would you refrigerate or leave sit covered while the first cake bakes? Some of these tiers will take an hour or so to bake.

I haven't tried the extender recipe yet and don't want to make a wedding cake my test run.

Thanks!
Debbie

Stick it in the fridge. I do this all the time and it works fine. If you leave it out, the levening over reacts.

Thanks! That's where it is now. I left it out covered for a while then stuck it in the fridge. I figured since I didn't know i'd split the difference. My 12" is almost done then i'm making the 8" and will use the rest of the first mix in that. I'll let you know how it turns out!
