I need to write a message on a fondant cake -- can I use buttercream? Or should I use royal? I've always made a plaque or banner of sorts - but doesn't really work with this one.

You can use either buttercream or royal - it's up to you. Either will work just find on fondant.

I agree with cake pro. If you are using fondant because of heat issues make sure to use royal. In really hot temps I have had BC melt and bleed down the side of the cake.

You can also literally write on the side of the cake with Doodlers or non-toxic markers.
