Help Cake Fillings

Does anyone have a recipie for strawberry or raspberry filling? I am looking to torte a cake with one of the above fillings? Thank you in advance for your help. icon_smile.gif

I am not sure what you are looking for. You can use jam in either flavor, make strawberry or raspberry mousse(just use the raspberry mousse recipe on CC and sub strawberry for raspberry jam) or I have heard of mixing flavorings into buttercream. HTH

I have a good Wilton recipe for strawberry or raspberry filling that is made with cream and berries and cornstarch I think...if you are interested in it, send me a message and I will type it out for you...I think it is in one of the Wilton Wedding books..

I made the raspberry one for my Dad's bday cake and it was very good..the colour was kind of bright and there were the seeds but the taste was delicious..

A question allong the same lines if I want to use a filling, but cover the cake in fondont and leave it out overnight decorated I cant use a cream based filling Right?

Exactly what type of filling did you have in mind? Without knowing, it's hard to say.

Oh sorry tottally left that out icon_redface.gif I was thinking raspberry, I really dont want the cake to get soggy so my plan was a thin layer of butter cream and then raspberry jam. Is there a different filling I could use that I could still leave out overnight(keeping the raspberry)?
