Actually Broke The Ka!!!!

My first attempt at MMF and I broke the dough hook attatchment to my kitchen aid. It just snapped right in half while mixing!!!!! Did I do something wrong?? The mmf seems very stiff and thick but I thought it was supposed to be. It certainly doesnt have that silky porcelain feel of fondant but it tastes pretty good. Has any one else had a problem with mixing mmf?????

maybe you added too much sugar..........you don't use all 2 lbs. of sugar in the recipe!!! You just add sugar until it forms a dough and is not too sticky!

I'm sorry that your dough hook broke, maybe it already had a hairline crack in it that you didn't notice?

I have had problems with my kitchen aid too. I found that using a ton of crisco on the counter and my hands works better. Melt the marsmellows the same way, pour half of the sugar in and dump it on to the counter mix by hand(VERY MESSY) and gradually add the rest of the sugar as you go. You might not need the whole bag. This works better for me! Hope that helps.

Try Putting it in the microwave for about 60 sec. Kneed it with some crisco. That might help.

Sorry about that!! icon_cry.gif I always mix my MMF by hand....I don't have a KA and probably wouldn't make it in it anyway because I've heard too many problems happen when you mix MMF in it. It always turns out great for me when I mix by hand. thumbs_up.gif

I had something similar happen to me, but didn't break my dough hook. I actually ruined the motor to my KA mixer. I was mixing mmf that had already set for a while and I knew I was pushing my mixer too hard, but I kept going till the whole thing died on me. Good thing was....I got a new mixer and my DH bought me the big professional series one......which I absolutely love!!!!!!!!!!

When I was putting my new mixer together, there was a little sticker on the dough hook that said to only use the hook on low speed....I didn't know that before....makes sense though. Good luck!!!!!!!!

Ok I do use my KA for MMF but I have the 6qt professional one...and I only do 1 batch at a time and I dont add all the sugar.....I get it close and add the last bit by hand.. (I use the dough hook but as stated previously only on low).

thank you to everyone for your responses and help. I made another batch with my paddle attachment and took it to a certain point and then mixed the rest by hand. I also added Crisco. It turned out well. Its not as silky as the wilton fondant but it sure is cheaper!!! THANK YOU ALL!!

If you want a heavier duty mixer (the kitchenaide is not a heavy duty mixer) then look into the Bosch Unversal Concept Mixer or the Magic Mill DLX2000/Electrolux Assistent mixer for larger batches and those stuff recipes. They have a different approach to mixing that lends itself to being able to handle LARGE and small quantities (like up to 12 lbs) and can mix a very stiff dough... I have the Magic Mill DLX2000 (just extolled its virtues on the business forum) and I can't speak more highly of it. HATED the kitchenaide for anything but simple batters.

I have a 20 yr old KA that I made MMF in a few times taking it out and kneading at the end, with no issue. I bought a KA "Professional" after making MMF a few times the PLASTIC housing for the motor snapped!

SO I bought a 7 qt DeLonghi, at the recommendation of a woman who worked in a bakery. about 4 months into it the metal piece that holds the beater in place just snapped off and fell out.

I injured my rotator cuff (possibly by kneading and rolling) so I can't really knead the stuff too much. Looks like I am forever destined to buy fondant - which really stinks! icon_cry.gif I was very happy with the MMF.

I was just looking through old posts to see if I could find something similar. I broke my KA Pro 600 last night making MMF. I have 5 cakes and 4 doz cookies due in the next 4 days icon_cry.gif

My sweet husband, who's a military mechanic, has to get parts - so it's fixable. The plastic housing snapped, but it's actually much more on the inside. He says the engine/transmission (?) parts are widely available and "This has to be common" because of that. I thought I'd search the forum and see.

He ran out and bought me the KA 5 quart (I don't even own another hand mixer here) and I can't get over how much smaller it is!!! So, when he finishes fixing the big one, I'll have a mama and a baby mixer icon_biggrin.gif

I had always thought KA's last 100 years, so it was nice to find this post. I think I'll be working the MMF by hand in the future...

I mentioned before in this thread (I believe) that I have the Electrolux Assistent dlx2000... I adore this machine... if anything ever happened to it, I would be sooooo upset! and I got it for a steal and owuld NEVER be able to replace it for that price (I still look, so I know)... I mean, if my Food processor died, it's just a couple hundred dollars... but when you are talking about aplunking down $600, you swallow a bit!!! That's almost what we paid for our refrigerator!!!

I never tried MMF in my KA because I didn't want to clean the thing. It's so easy to make by hand - and kind of therapeutic, IMHO. But, if I HAD tried it in the KA, I think it would have worried me to death. It looks like that worry would have been well-founded!

I do my MMF in my KA Artisan, I get about 2/3 of a bag of confec sugar in it then it starts to labor some, as soon as I see that I stop it, take out the MMF and work it by hand. I rarely add extra sugar and there is always confec sugar "crud" in the bottom, I work it lightly with shortening and it only seems to take a few minutes to make the perfect brick.

this is very true.... another reason I went with the Magic Mill Assistent/electrolux as it's still made in Sweden, not sent to China and bread bakers swear by this brand and Bosch... If a mix can handle the beating of whole grain breads in multiple batches, then I trust it... I had read on too many review of KA for people who use them for heavy duty useage that they burn out.

i use the small recipe doubled(2c masrsh.....) but always used the paddle. I also mix it till it is a bit tacky then knead a bit more sugar on my mat. I just have the 4.5qt KA. I did not know I would discover CC years later, otherwise I would have purchased a huge KA--lol

My KA is new so if it breaks the first time I make MMF, they'll get it back! They say they will ask no questions & will replace it free of charge. Not only that, but they say they will start the guarantee all over again on the one they replaceit with. It better last or they'll be replacing one every time I make MMF. I can't do a lot of kneading (medical reasons) so that's why my DH bought me this. Thanks for letting me vent!
