Can Mmf Be Refrigerated??

I have my first order for MMF for next month. I've never made it before and will be experimenting this weekend. The wedding cake is going to be filled, then covered in MMF. The fillings will need to be refrigerated, but can I do that with MMF?

Also, how long do I need to let the MMF dry?

I have read that with regular fondant you can put it in the frig on a very low setting for a while. I am not sure about the mmf though. I would think that the same would apply. I haven't been brave enough to put it in the frig yet!!! I have tried to stear my brides towards certain fillings that don't need to be refrigerated!!!!

I know they might not be much help, but thought I would give you some input

If you are covering the entire cake in MMF, there really isn't a drying factor to worry about. If you are making MMF accents on the cake and are concerned about the drying I would do all those ahead of time or at least over-night to dry somewhat hard. For a very hard finish, I would add gumtex or gumpaste for those.

As for refrigerating MMF, it will get a slimy sheen to it. It's not really meant to be refrigerated, but maybe someone has a different experience with it that they are willing to share. Some of the ready made fondants are perfect for the fridge, but MMF is not one of them, in my opinion.

I'm covering the whole cake in the MMF. How long do I need to do it ahead of time before they cut into it? Is the night before okay?

Then night before is absolutely fine. icon_smile.gif I'm sure your cake will be wonderful. I was just looking at your cake pictures and you do beautiful work!

i just made a test cake covered in mmf this weekend for a friend (a surprise cake)...discovered they were not home so all weekend i had it in the fridge. when i removed it, it held up, but had a smudgy to the touch feeling. i put it near a cieling fan to help dry it, but after 20 minutes or so, it still looked the same. the spot where i touched it had a finger mark that was visible so i had to re-brush the luster dust in that spot and it was fine. i ended up taking it as it was (free cake) but i bet it would be good to let it sit for a few hours near a fan. i did notice the wilton fondant didnt get sticky in the fridge though---but it doesnt have a great taste to it....i am new to this too...just wanted to let you know what i just experienced.
