Hi.

How far in advanced can I make and/or decorate cookies? I plan on decorating themn royal icing and they'll probably be normal sugar cookies. TIA

Cookies do very well in the freezer for a few weeks. they need to be well packaged to protect them from odors. If they are decorated with bright colors, there is a risk of color bleeding. You can reduce this, by thawing them in the airtight package. The condensation will form on the package.

I often bake my cookies well in advance of needing them, then freeze them in airtight plastic containers. I will move them to the fridge the day before icing. Once I ice them, they stay at room temperature and are eaten within 3 to 4 days. If you can, experiment with your favorite cookie recipe to see how they taste after certain amounts of time. There always seems to be a cookie or two leftover that you can do this with.
