Do You Have To Sift If You Weigh Flour?

Do you have to sift the flour if you weigh it instead of measure it? Sifting is a bit of a mess... any tips would be welcome. I want to be a perfect scratch baker, and I'm a moistomaniac (can't stand dry cakes), so I'll do anything... but I'd love to skip the sifting if I could. Thanks for responding...

Yes.you.do.need.to.sift.after.you've.weighed.the.flour.as.it.adds.air.which.lightens.the.cake.

Yes, everything that Emma said is correct. I have a small mesh strainer that I use for sifting, it fits directly over the bowl. I don't get a mess, sometimes I sift over a piece of wax paper so that I can lift it and add the dry ing. directly into the mixing bowl.

If the recipe requires that you sift the flour.... then the answer is YES.

I use a sieve and a spoon to sift my flour. Once I place the flour in I use the spoon to pass it through the mesh.... NO mess...

90% I use sieve for my flour. But Rose Levy Beraunbaum (of Cake Bible) has different opinion/option. One of her tips is to process it in the food processor to get the same results. HTH.

Well, if it's a choice between rinsing off a sieve and washing 18 parts on my food processor... must be nice to have a staff. icon_smile.gif I do love Rose, tho!

I don't sift it it doesn't have apparent lumps. I do whisk the dry ingredients together after weighing before adding them to mix them and add air. I find I need to sift powdered sugar more than my flours.
