Frozen Cake Help...please

OK...alot of threads on CC talk about freezing cakes first before icing them. The taste and moistness is better that way? My question...How long after taking the cake from the freezer do you wait to ice it?

It will normally thaw in a couple of hours, sooner in warmer weather. If you put icing on a frozen cake, it can refuse to stick, or warp away from the cake. It is best to wait until the cake is mostly thawed.

Some people ice their cakes frozen. I haven't had any luck doing it that way I let them thaw completely then ice. Because it is so hot here it takes about 1 or 2 hours for them to thaw. I freeze all my cakes because they really do come out really moist.

I freeze all my big cakes and sheet cakes. They are much easier to maneuver if you're layering them and won't crack because as they thaw they conform to one anothers imperfections (or that's how I understood it). Just be sure to wrap them up tight and unwrap when you thaw.
