I'm planning to make petite fours using the mini muffin pan. I've never done them before. Could I use candy melts to dip them in? Would I have to add anything to the candy melts?

Yes, you can use candy melts. It will give you a slightly crunchy coating. You can add some heavy cream to soften the covering. Regular ganache is a bit too soft, that is about 50/50 cream/chocolate. If you use a ratio of 75/chocolate to 25 cream, it will be a good firm cover.

If you want to use plain candy melts, you will probably need to add paramount crystals or shortening to thin it enough to dip easily. Start with adding a tsp at a time until you feel it is working for you.

You could also pour the melted candy melts over the cakes. Place them on wax or parchement paper so you can easily scrape off the excess chocolate and reuse it.

Thank you so much! I like the idea of dipping them- seems easier and less mess.
joannb- thank you! I will do that, I'll let you know how they turn out as this will be my first time doing them! I'm nervous!

Remember, to freeze the cakes before you dip them! I only use candy melts for my petit fours now. I love it!

candyladyhelen- Do you add anything to the candy melts? Would I still have to freeze them if I make them in the mini muffin pan?
