So I made my first batch of MMF last week and loved it. I don't know why I've been so sacred to try it. Anyway, I haven't gotten brave enough to cover a cake with it yet and I used it to cut designs with a cookie cutter to put on cupcakes. So, now for my question: I made the second batch last night, let it set in airtight contianer overnight. I just took it out to roll out and cut and it was extremely sticky. I couldn't hardly get it out of the plastic wrap. So, I'm thinking the only thing I remember doing differently this time was on the second kneading I don't think I put in as much powdered sugar this time. Could that be my problem? Or it has been extremely hot this week but my AC is running comfortably. So what do you guys think it could be? Any suggestions will be greatly appreciated!!

Sift some more powdered sugar, and knead it until it is not sticky. Sift to avoid any lumps at this point. and don't over add sugar so it won't get too dry.

the humidity will effect every batch a bit differently.

just knead in some more powdered sugar. I made two batches a few days ago and one batch was sticky and the other was dry. icon_biggrin.gif so I added more sugar to one and kneaded some crisco into the other. If you roll it out with corn starch it will take some of that moisture out too but you don't want it sticking to your rolling pin.

I have only made it myself once using the recipe from this site. It was very humid outside, and the A/C was running, but I think the extra humidity required more powdered sugar. I ended up using a lot extra. I just kept adding a little at a time to it felt right, I based it on the feel of the stuff I get from my local cake shop. The extra sugar made all the difference. It turned out fine, and was able to use it as I normally would.

Thanks for the replies. I kneaded some more powdered sugar into it yesterday evening, rewrapped it and let it set overnight. So in a few minutes I'm going to try again with the rolling and cutting. But when I kneaded it again it was already feeling more like it should.
Thanks again!! icon_biggrin.gif
