Refridgerating Lemon Curd . . . With Satin Ice

is necessary because it has eggs in it, correct? I just finished a cake that will be eaten at 11 am. It's covered in Satin Ice, which they say can go in the fridge. Should I be ok in the fridge?

The low for tonight is supposed to be 50 F. Not cool enough to count as refridgeration if I put the cake in my trunk tonight, right? I like to do that whenever possible because I have so much stuff to lug out of the house in the morning--gym bag, clothes, laptop, purse, lunch. I'm a regular pack horse.

The lemon curd should be refrigerated. The cake will be fine. Any condensation that might form will evaporate quickly.

i suppose it would depend on the recipe you are using for the curd but the one i used, as well as a few others i've seen, can be left out for a couple days.
