Hi all!

I wanted to make some cookie dough on wednesday and leave it in the fridge until Friday when I will bake them in the evening...is this ok? Ive looked around and have found lots of info on freezing cookies but none on how long one can safely refrigerate them. Any info would be much appreciated.

THANKS!

ps--they're gingerbread cookies.

Most cookie doughs will be fine for several days in the fridge. Be sure it is well wrapped and protected from refrigerator smells.

I agree- I have left gingerbread dough in the fridge for at least a week before, just make sure to wrap it in a couple of layers of plastic wrap.

I always make my cookie dough ahead of time. On the day that I plan to bake, I take it out of the refrigerator to allow it to come to room temperature. This makes it much easier to roll out.
