Refreezing A Cake

I know this subject has been spoken of before about freezing cakes, but does anyone know if it is safe to "refreeze" the cake after it has been decorated?

I made the cake Sunday, froze the cake and decorated it last night. I have it sitting out covered (in air conditioned home) with wax paper but I don't want to leave it out. It is for a function at work Thursday.

Any help would be appreciated. Thanks!

Hi Melanie,

I once made a cake, froze it, then pulled it out to decorate it like you - with fondant. I then put it back in the freezer. I pulled it out the morning before (24 hrs) to ensure it wasn't frozen when I took it to church following day. I left the last little finishing touches until I pulled it out for the last time (just some red lettering from a tube - the fondant was already on it.) The red lettering had time to dry and crystalize a bit.

I know that as long as a cake is decorated (i.e. the cake portion is completely covered with icing) it is abolutely fine for a few days. It also needs some air to allow the icing to crystalize.

In terms of defrosting, MAKE SURE the cake is completely wrapped - tightly in the saran/plastic wrap AS IT DEFROSTS. This is more important for cakes that do not have fondant, but buttercream. If plastic is opened before it is defrosted, the air gets in, dries it out and it loses flavor fast. This is why some wedding cakes that are pulled out after a year taste disgusting - they were not wrapped properly or they were opened while defrosting.

This is not related to freezing or defrosting: Fondant is okay is left out, somehow!

In terms of refreezing, I would just go ahead and do it - as long as it is well-wrapped and has not been out an extensive amount of time. Also something to consider is whether it has whipping cream in it (as opposed to NUTRIWHIP).

Hi gmv,

Thanks for the info., I was thinking on the same line as you but wanted another persons opinion. I didn't use anything in the icing that may cause it to spoil. It's still too hot here in LA.
