I found this cake on bakemeacake.net They make the most beautiful cakes! I'm making a wedding cake next week and would like to have the "criss cross" effect on the side like on the base and 3rd tier up. How is this done? Also is the little dot piped or is it some sort of edible bead?

the technique is "quilting" and you can buy a tool that imprints it into the side of your cake or you can just grab a ruler and do it yourself with a dull-knife into the fondant.

The dots are edible sugar pearls, which you can make or buy. They come in lots of different sizes and shades.

the diamond pattern is made with an impression mat. I've not seen them in my local cake supply stores but they are all over the internet cake supply sites. Those dots look piped to me, maybe royal icing. You could do pearls as well. Some people make their own pearls from fondant. I ran across a good tutorial for this but can't remember where. Maybe someone else knows. also if you search for fondant pearls in the forums you could probably get some good previous threads on this topic.
