I delivered 2 dozen Wizard of Oz themed cupcakes to a preschool class for a customer's child. She had ordered them for the "school" party and planned on picking up a plain sheet cake from the grocery store for the "home" party, so she could save money. After seeing and tasting my cupcakes she called tonight to see if there was anyway I could make another batch for Sunday afternoon! I explained that I couldn't make the shoes (Shabbos starts soon and I won't have time to do those again), but I could do the rainbows and yellow brick roads, but the charge would be higher.
Even with the increased price, which turns out to be 3 times what the sheet cake was going to be, she ordered!! She said, she just had to have them, and please bring a bunch of business cards so I can give them to all the parents!

The first time around I only charged $45.00 for 2 dozen, which is $1.875 each. It came out that way because she kept changing things and the first change I didn't charge more for, but after the second change I added a $5.00 charge. The second time around (rainbows and yellow brick roads only) I charged $2.00 a piece.
This was my first (2) cupcake order(s), so I really didn't have preplanned pricing. Now that I've done this, I decided my standard cupcakes with a buttercream swirl will be $1.50 each, and custom designed theme cupcakes start at $2.00 each for buttercream and $2.50 each with fondant accents. It may seem high, but I spent 4 hours decorating those little buggers (without the shoes). When we did the shoes, we hand molded each shoe, let them dry, painted red, and then dried, painted with luster dust, and then dried. It was a lot of work, short spurts maybe, but it still took time and precious counter space, etc.
Figuring out the cost of materials plus overhead, I earned 3.20 an hour on the first batch. For the second batch I earned $5.90 an hour. Still under minimum wage.
