I finished up Course 3 today. I was pleased with the fact that my instructor helped me step out of my comfort zone. I will no longer turn down cakes with string work, lace, ruffles, fondant and gumpaste flowers. Watch out world, here I come! ![]()
This is a hummingbird cake with cream cheese icing and buttercream piping. It held up very well during class, especially since they keep the room at a good 60 degrees. Brrr...The roses are a gumpaste/fondant mix. The cake is now in three seperate containers, 1/2 of the 10" for DH's work, the other half for the office at my children's elementary school and the 6" for a new neighbor across the street.

Thanks everyone. I'm pretty proud myself, but my instructor was very patient and I know I have a new cake friend in town. She was also cool about letting us do what we wanted for our final cake, as long as we practiced what we learned in Course 3. Each cake looked very, very different, and she was able to talk about all the different types of construction and designs. I hadn't bought the kit, so I was happy I didn't have to by columns and plates.
