I have a BD cake to make for Saturday evening,
Can i go ahead and bake my cakes , crumb coat them and freeze them now and then Thursday night lay them out and decorate them Friday night or can i leave them un crumb coated and wrap them up not freeze them , and then decorate them by Friday night will they be ok or how should i do this to save time but not taste i want them to be pretty fresh, its a stacked cake, for a 16 bd

Personally, I would freeze them. Wrapped well or leveled and crumb coated well-boxed.

I don't think sitting around on the counter does any cake much good.

Thanks that what i ended up doing , i didnt crumb coat though i was afraid it would stick to the cake when i icing it ,

I've baked wedding cakes on Tuesday .... baked, iced, decorated .... it sat on the counter until the Sat wedding. Had a number of guests tell me it was the freshest cake they'd ever tasted!

Thanks indydebi, i put them in the freezer and will take them out tonight crumb coat them tonight and probablay icing them and finish them tomorrow night, what would you keep them in after i icing them i dont have a cake box large enough to keep them fresh i thought about a computer box wrapped with foil, any suggestions on this one?

I always bake on thursday, decorate on friday for a sat delivery... this way they have plenty of time to settle...always fresh and moist never a complaint..
