I haven't used fondant that much yet.. I did make a few practice cakes covered with MMF and the first one I refrigerated and the fondant got sticky..The bow and other decorations held their shapes ok but they were very sticky..

Extreme cold will cause the fondant to 'sweat' and spoil. Extreme heat will melt the fondant and make it droop so you're caught in the middle a bit. It would be best if the decoration could be attached to the cake once it has left the fridge for a little while and left to 'warm' up a bit. Some strong colours may bleed into your b/c covering if refridgerated. I only work with sugarpaste which is a type of fondant and even although I don't live in the hottest climate (ain't that the truth!) I have to keep a regular temperature always to make sure my display cakes aren't puddles in the morning!
My problem is that clients often want their cake delivered to their reception site the day before their event (especially if it's a morning party) or they take them home for a party the next day, so the cake gets refrigerated...fondant and all. I don't trust the reception halls to add pieces the next day, and I can't be there to fix it if it gets droopy. Any suggestions?
