I was just wondering what the best way to achieve a good black in fondant was....am making MMF, so would I make it chocolate by adding cocoa powder...and then tint black, or what? I don't have access to the americolors...so, I'm just concerned that putting a ton of color into it will make it taste gross....I watch the cake challenges on Food Network all the time, and wonder how they get the fondant so brilliantly colored...thanks for any help!

If you purchase the Dutch Processed Hersey Cocoa and add about 1/4 cup to your MMF Fondant it will be black! Trust me on this, it will be Very Black........but it has to be the Dutch Processed Cocoa.

Tip Top-- how does it affect the workability of the fondant? I just made the chocolate fondant from the cake bible and was not happy with it..... very cracky and sticky. Thanks

If you don't have coca powder, use a lot of red coloring then black. It will give a real nice dark looking black as well.

If you cut back a little on the powdered sugar to equal the portions it should be very pliable and just as nice to work with. icon_wink.gif HTH

<if you have problems to make your fondant pliable add to the mmf 2 ounces of gum paste and mix, it will work out ok. I do this with the chocolate fondant.

If you are making MMF I always color my melted marshmallows. It takes a lot less food coloring, and saves your arms all of the kneeding.

I do this with all of my dark colors (red, blue, and even dark green)

that is also a good idea leily, I didn't even think about pre-coloring the liquid MM....although, that would mean that the whole batch would be black...hmm...I have a lot to think about....thanks for all the ideas!!! icon_wink.gif

You can make a small batch of MMF for the black color. I do this when I want a dark color but I don't need too much. Then I can add the color to the melted marshmallows as suggested above. Use 1 cup of the mini marshmallows, 1 TBSP. water and add powdered sugar until it is the consistency you need.

For black fondant, I prefer to buy it already tinted. I always make such a mess. I guess I'm lazy too LOL.

I just found a cake supply store near where I live. Well, not entirely near, it's at least 30 minutes away, if not more..

anyway, I was looking for a CK retailer, and the website emailed me and told me that is the closest retailer where I live, so I went to nose around the other day.. They sell Satin Ice fondant there.. Well, after hearing all the reviews here I bought a 2 lb batch of it. I don't know why, other than I know for a fact I will need black fondant for the cake I'm doing in September, and I'm clueless when it comes to fondant, so I thought I would play with it. (luckily, the lady at the check out told me they will deliver to almost all the Atlanta area, including where I live.. woot!)

Of course, the first thing I did when I got home was open it up and taste it.. and I was amazed at the difference. Wilton was the only kind I had tasted before.. it tastes like stale sugar, in my opinion.. This stuff.. it tastes as good, if not better, than the MMF I had made (without success, but it still had a great taste)

hrm.. got off track.. so um.. I guess the reason for my post is to say, if you can find a retailer near you, that sells satin ice, it's a good buy.. and I am definitely going to get it for the cake I have to do, instead of trying to color it myself (mainly because I AM such a newb when it comes to fondant) .. Now I'm trying to find something to make with the 2 lb batch I just bought.. haha

Good luck!!! I hope you find a way to color it successfully. I will definitely be checking back to see your results!

Happy Decorating!

Holly

I use this small batch too most of the time. I rarely need a large batch of a dark color. Works pretty well.
