Hi everyone

I am doing a wedding cake which is fruit cake and it needs to be carved into sort of a vase. shape Now I have never carved a cake let alone one made of fruit cake and I am very nervous, I actually baked two sets of cakes in case I stuff them up, anyway my questions are, do you freeze the cake before carving and what type of knife do you use serated or smooth. Any answers and hints would be greatly appreciated.

I wouldn't freeze it, fruit cake might be too hard to cut. however, a good chilling in the fridge would probably help.

As for knives, you should try a cut with both, and see which makes a cleaner cut. the fruit cake will be more difficult to cut smoothly. You will probably need to clean the knife frequently to remove any stickiness.

Personally, I might even try an electric knife.

The fruit cakes here have nuts in them, so use a sharp knife and be careful.

Ok I will chill the cake rather than freeze. The fruit cake does have nuts, I actually thought about using an electric knife will try it and let you know how I go.

I am not sure I would use an electric knife but that is my humble opinion.

Fruit Cake doesn't need to be chilled or frozen either. It holds it shape, mine do anyway.
