OMG!!! I made my first cake balls on thurs night and they are REALLY addictive. I used this recipe (quadruple batch of this):

2 cups scratch yellow cake crumbs
1/2 cup mini chocolate chips
1-3 Tbsp Vanilla Caramel Coffeemate Creamer

I dipped some in powdered sugar, some in chocolate, and some in cocoa powder (with sugar mixed in)

These CANNOT be healthy!!! Especially since I have already eaten 12 or more of them!!!!

WARNING FROM THE SURGEON GENERAL:
Cake balls are made of extremely fattening ingredients and cannot be consumed in normal portion sizes due to the immense and overwhelming desire to eat in mass quantity. Cake balls are especially dangerous for those aflicted with OCD and may cause constant obsessive compulsive behavior. Cake balls may be hazardous to your health!!!

Ok now I'm not sure about these cake balls. I thought you mixed them with buttercream and added other things like nuts. Put it into a mixer and it will form a ball. Then you form it into small balls and dip in chocolate or powered sugar.

So are you saying you didn't use any buttercream?

I made some with Chocolate Fudge cake and some leftover ganache. I added a little powdered sugar as well. They are fantastic. I haven't covered them yet and have already been eating them. I made a chocolate cake just to be able to try them. They are very good and who ever came up with the idea is a geneus. I have about 100 left and need to get them dipped in chocolate before they are all gone. I couldn't find a scoop to portion them out so I got a melon baller and it worked great, they are a perfect bite size. I scooped and my husband rolled. icon_smile.gif

I used a little bit of buttercream and mixed with a spoon. Then shaped into little balls.

OH! After I mixed all of the ingredients I scooped them with a medium size scooper-thingy and used my hands to form them into little balls, THEN I dipped them into the chocolate, powdered sugar or cocoa.

I had read on other threads here about the Vanilla Caramel Coffeemate Creamer as the liquid and just decided to try it. I did another batch with just buttercream and they were good, but not as good as the ones with the caramel. I don't like nuts, so that's why they were not added.

I saw some Coconut flavored Coffeemate creamer at the grocery store this morning.....hmmmmm.....coconut and chocolate cake balls...YUM!

I'M ALREADY OBSESSING ABOUT MAKING MORE!!!! icon_redface.gif

I've got cake scraps just begging to become cake balls. I'm afraid though because they're from the cake with van/caramel coffeemate mixed in and that's addicitve as it is. I will gain so much weight from these things. icon_lol.gif

Ok...How about OCD= Obsessive cake decorator!

I am going to try to do the cake balls and cover with orange colored white coating chips to make them look like little pumpkins. What do you think? Then put a bit of green icing on the tops for the stems?

Or OCD= Obsessive Cake Devourer and given everyones inability to not eat these yummy guys I think thats most approrpriate.

Well....after about 6 hours of working in the kitchen trying to make a red wagon cake, making baked beans for a party and trying to do cake balls I am ready for bed. My behinny is dead....BUT...I wanted to tell you I made some cake balls that are really good. I took my white cake scraps , mixed in crushed toffee and chocolate then covered them in dark choc. Of course I had to try one and they are yummy! The toffe crunches so nicely. I made some others but covered them in the vanilla candy coating and they sucked. Now I have some others waiting to be dipped that are white cake, mini choc chips and Kahlua...YUM!!

I will post the ugly pic of the wagon once I get it done. When I made the wheels out of chocolate (which I had to dye black) the choc melts at the touch of my hand. So I don't know what to do. I made some fondant wheels and hope they are dry enough tomorrow. I put them in the oven with the light on only to help dry them.

I have no idea. I didn't refrigerate mine, but they only lasted about 20 hours before they were all eaten anyway. I think that when I make them again I will refrigerate them, but bring them back to room temp before serving. I really don't think that they last long enough to worry about it.

Ok...the pic of the wagon with the cake balls in the wagon is in my photos'. It was too big to put here and I don't know how to make it smaller. The wagon didn't turn out so bad after all. Of course I see all the mistakes but first time working with chocolate sheets like this. The idea cake from a booklet written by Vi Whittington (owns Country Kitchen Sweet Art with her daughter Autumn Carpenter) called "The Sheet Cake Way". It all types of things you can make from a sheet cake.

I made the cake balls today with van/caramel cake and OMG! I made half with toffee bits, pow sug, and some bc. The other half I made with cocoa pow, caramel pieces, mini choc chips, and a dash of choc/caramel liquid creamer. I dipped most of them in chocolate and rolled some of them in pow sug. They are too good. I have them in the fridge so hopefully out of sight, out of mind icon_lol.gif -Jen
