are you cooling the cakes completely in the pan or on a rack?
If you leave them in the pan they continue to cook from the heat in the pan and will shrink as they start to over bake. (I forgot to take a cake out today and it did it a lot, thankfully I was going to carve the cake anyways so it was all good)
Heat causes things to swell. Cold causes things to contract.
Heat causes the molecules to move faster, which is why water boils and oatmeal overflows out of the pan making a big mess on the stove.
Cold causes molecules to slow down. When they are not moving as fast, they tend to "group together", i.e. "contracting" or "shrinking".
Which is why you put ice on a bump on your head ... to take the swelling down.

I did leave my cakes in the pan to cool. I don't usually do that, I don't know why I did this time. Thank you everyone for your answers to my question.
