I am taking the Wilton courses through Michael's for refresher courses because it's been a few years since I've done any cakes.

My instructor keeps saying it's crazy I just don't do them and keep my mouth shut about doing them and am going to the extent of being licensed.

It's getting old.

Ok let's see...

Up side: I get tax write off's on home improvement, I set my own hours, I get to be at home with my children (6 year old son & 12 week old girl), I can advertise, I can bake worry free and with peace of mind when I have a cake in the oven and frosting being made and there's a knock at the door I don't have to freak out thinking I've been caught by the FDA.

Down side: I can't do character cakes, I couldn't advertise, and if someone gets in a snit fit with me they don't turn me in for an unlicensed bakery going on in my home (oh wait that has already happened, I'll post that story in a second).

Yeah... thanks but I think being on the right side of the law is a good thing. So does my husband, we are going shopping this weekend to price out the last two things I need. A kitchen aid mixer (that's going to be a hard sell to him VERY doubtful I'll be getting one anytime soon) and a commercial rated fridge.

The instructor I had for my wilton classes also worked unlicensed. Her theory was if you aren't caught, who cares. I was shocked she would say such things during the class.

Some instructor! It's easy to hand out the advice when the instructor wouldn't be the one getting in trouble with the health department! Ask her if she will cover the fines and bad press that you'd receive for being busted for an illegal kitchen?! It's worth every ounce of worry and fuss to be licensed. No more worrying about being caught...no more not being able to advertise, etc. It's worth it!!! Go for it!!! thumbs_up.gif

You are doing the right thing. I have been asked by many questioning people "are you licensed?" and I can proudly say "yes". I always wonder what they would do if I said no to that question. Not everyone who bakes can become legal because of the state they are in, but if you are able too--I highly suggest it.

I'm going to Sears again tomorrow for my friend with the Lowe's add. (on sale for $150) Sears price matches 110% so the Ka which is the 5qt artisian is $135 there--plus there is a $30 rebate, which make it $105.
