Has anyone seen Baker Duff on Ace of Cakes; his new program on foodnetwork? Where does one buy a large amount of molded chocolate to make a chocolate sculpture? His sculptures are wonderful and I would like to add this to my cakes.

It is called modeling chocolate, or chocolate clay, or chocolate plastique

It is easy to make:
14 ounces chocolate, wafers or candy melts - melt slowly
add 1/3 cup clear corn syrup
Stir till blended- don't over mix.
Pour it out onto waxed paper or silpat, cover lightly and sit overnight.

Knead with your hands until pliable
