Is there a difference in the different brands of gum paste? Or are they all the same? Don't know the first thing about it; used it once in a Wilton class a few years back (I've slept since then) and of course we used the Wilton brand. Thanks.

They are a bit different. Wilton's generally needs a bit of shortening in each piece you pull off. I just get a small dab on my finger and knead it in.

Bakels brand, I find, is more sticky, and needs powdered sugar and/or cornstarch so it doesn't stick to the pin and board.

I find wilton premade to be pretty good for me. I like the workabilty of satin ice gumpaste better. Never used bakels. I have had other pastes that never seem to harden for me. But so far the Wilton and Satin ice always have.
