Help! Bride Changed Cake From White To Pineapple!

The bride has changed her mind and wants a pineapple cake. Does anyone have a tried and true delicious pineapple cake recipe that will work for a stacked cake?

the picture shows it with whip cream, but you can substitute for bc.

Hawaiian Sunset Cake

INGREDIENTS

* 1 package (18-1/4 ounces) white or orange cake mix
* 1 package (3.4 ounces) instant vanilla pudding mix
* 1 package (3 ounces) orange gelatin
* 4 eggs
* 1-1/2 cups milk
* 1/2 cup vegetable oil
* FILLING:
* 1 can (20 ounces) crushed pineapple, drained
* 2 cups sugar
* 1 package (10 ounces) flaked coconut
* 1 cup (8 ounces) sour cream


DIRECTIONS

In a large mixing bowl, combine the first six ingredients. Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
In a large bowl, combine the pineapple, sugar, coconut and sour cream. Place one cake on a serving plate; top with pineapple mixture. Repeat layers twice.

I just take my regular white cake recipe and throw in some wrung out crushed pineapple and a few drops Lorann oil. I use my white cake batter as the base for lemon, ornage, strawberry, pineapple, pina colada, and chai tea flavor cakes.

Use the drained pineapple juice instead of the water (if you use it) in your recipe.

Thank you all for your suggestions. They all sound like they will work. Diane--thank you for all your work on the recipe and picture. I'm going to make a sample cake this weekend with it. I knew I could count on my CC friends for help.

Diane that cake look's absolutely delicious!

Leahs, You make a white Chai tea flavored cake? Could you send me recipe for it please. I know you said you just add flavor's to a white cake mix, but how and what kind of flavoring. I make Tai Chai to drink all the time and love it. Never thought about it for a cake flavor. Thank's for sharing that. Gin

Chai Tea spice mix:
2 parts cinnamon
1 part clove
1 part anise
1 part ginger
1 parts cardamon

I add 2 T of the mix to my white cake batter for an 8" cake. (If I remember correctly.) If that doesn't seem like enough spice, then throw in some more. This will not affect the cake batter.

PS. I never, ever use box mixes.
