Cake Ball Help!

Ok after last night's fiasco of adding corn syrup to try to thin my chocolate and having to start over I went to Michaels this morning and bought the chocolate Pro melting pot, and some candy melts. Well the chocolate is still too thick and my cake balls literally look like little balls of poop. Can anyone help me? I'm supposed to serve these tomorrow night at my hubby's birthday party and I can't really serve everyone a little bit o poop! Any ideas?

Could you try sprinkling with powdered sugar or drizzling with a colored candy melt to 'decorate' them - maybe they won't look as much like poo...

candy melts and regular chocolate can be thinned with shortening, about 1 tsp at a time or paramount crystals which is flaked shortening.

lmn, i am trying to work here.... and all i am doing is laughing at this picture of you almost in tears saying " waaaa my cake balls look like poop!!!!!!!!!!"

i have never made them, so i wish i could help. but you really made me laugh.

I made cake balls a long time ago. And it's kinda funny because my sister really liked them so I gave her a dish of them to take to her work. She said they looked scary... maybe like poop balls??? icon_lol.gif So, only her and the brave ones who tried them knew how good they were and they didn't have to share!! icon_biggrin.gif

As for advice, I'll need that too on cake balls. icon_eek.gif

Honesty I found it hard to dip the cake balls, so I have just been spooning chocolate over top or drizzlying. I also think they are too rich completely covered. Someone recommended here putting balls in cupcake holders and doing this , has been a life savor and everyone at work loves my left over cake pieces.

hmm i use plain old wilton candy melts, melt in a small cereal bowl in the microwave and it gets pretty thin, you shouldnt need shortening with candy melts...then I take 2 forks and roll the cake ball around the bowl until covered (i dont really 'dip' them). drag bottom of cake ball against side of bowl to remove dripping excess and then place on wax or parchment paper to harden. they dont come out PERFECTLY smooth but they come out alright looking. if you want to make them more perfectly round and more tasty try rolling them in colorful jimmies or coconut shavings right after you dip them. otherwise do what a previous poster said and just drizzle a different color of candy melt on top to hide imperfections. ive got a ton of different kinds of cake ball pics in my photos if you want more ideas. Do you roll them in the coconut after you dip it in the chocolate? Same with the jimmies?

Yep thats the process! Go straight from chocolate to sprinkles or coconut or graham crackers crumbs or whatever you prefer. Just make sure to wipe the bottom of your cake ball against the bowl after you roll in chocolate so you dont drip a big chocolate goop in your sprinkles.

I made cake balls for the first time the other day. They came out pretty good for the first time. I put them in the freezer for a bit before I dipped them. I dipped them in dark chocolate then drizzled them with white chocolate. My husband said I should just make cake balls instead of cake. Yah right!

To form my cake balls, I use a scooper with a release handle (you squeeze it to release the cake ball), then I use my hands to roll them into a ball, lay them on wax paper, then stick tooth picks in them. Freeze them for at least an hour, and they dip really easily. I remove the toothpicks after they set and cover the hole with drizzle of chocolate

...seriously, did you get the chocolate warm enough, maybe you need to add just a bit of Crisco?

Yes it was melted I guess it just needed to be thinned a little. I really want to know how to get them so smooth and professional looking. Maybe if I thin the chocolate dip freeze and re-dip and freeze again? what do you think?

After you melt your chocolate, do you keep it warm? (I stand the bowl over boiled water - not touching the bowl). Sounds to me like your chocolate is setting too fast.
