Today was my first time to use something other than the Wilton BC recipe. I made a batch of the Buttercream Dream and used milk, per the directions on CC. I was told to refrigerate the icing until I use it to ice my cake. Once my cake is iced, do I need to refrigerate my cake, or can it stay out at room temperate (since there's milk in the icing)?

Thanks!

Shanna

You may see many different opinions on this one (especially if you search here on CC). I always refridgerate whenever any perishable ingredients are in the icing. Since BCDream contains butter and milk, I refridgerate the cake and do not let it sit out for more than a few hours.

You do not need to refrigerate it, there is enough sugar to act as a preservative. I make a variation of Buttercream Dream with water as my liquid, which works just as well.
