Last minute I was asked to do a wedding cake for this weekend. I have always said I wouldn't do wedding cakes but this person is in a bind so I said yes.
What should I charge?? The cake is going to feed about 200 ppl and they want 3 tiers all covered in fondant with strawberry filling. I also said I would deliver and set up at the reception.

What part of Illinois? I would say at least 3.50 per serving for fondant covered (thats my starting point). but see what the going rate is in your community. Also, remember wedding cakes are not ordered last minute so your service is at a premium, meaning you may choose to charge for that. If I am doing an order that is last minute I usually charge extra since it is going to require OT on my part to get it done.

If it was me I would charge an additional $100.~ at LEAST for short notice... and for fondant with filling I'd start at $3.25-$3.75 depending. Real strawberries pureed.... that's going to cost a fortune in strawberries and even though they are in season they aren't always ripe so you'll have to go thru alot to find enough ripe ones to puree.... if you can order strawberry filling off a website or from a local store (I have none available locally so I'd have to order online) I'd charge her shipping fees as well on that... but if it's locally I wouldn't charge extra because you'd have to go out to get the ingredients for everything else anyway...

I don't know where you are located, but check with other bakeries in the area to see what their base price is.
How complicated is the design? Are you going to have time to make fondant, or will you purchase it? What about the filling? Fresh strawberries are expensive right now, and it is no small task to make the filling from scratch.
For 200 people, you are talking about a pretty big cake. Don't feel guilty because they are "in a bind". You will be doing them a huge favor, don't sell yourself short. Minimum $3.75-$4.00 per serving.
We charge almost that much at the bakery I work in for buttercream wedding cakes! (Chicago suburbs)

Thanks so much for everyones help. I am in a sw burb of Chicago and everything that I have checked was between $3.50 - $4.50 per serving. I will charge a little extra since it is last minute because I am running around like crazy trying to get everything I need plus work my full time job.
