Buttercream Conundrum

I want to make my buttercream with 1/2 butter and 1/2 crisco b/c is tastes better than all crisco (in my opinion) But, here is the issue...I know that this icing has to be refridgerated before & after being put on the cake...so won't the cake sweat when it is taken out of the fridge? Wouldn't streaks be left on darker colored icing or spots left on fondant?

I would like to know how some of you more experienced decoraters handle this issue.

It only needs refrigeration to protect it from the heat. It will be 'safe' unrefrigerated.

If it is hot where you are, it might be a problem.

It doesn't have to be refrigerated. The sugar will act as a stabilizer for several days. The only time I put my buttercream in the fridge is if it's leftovers, and I need to keep it a while.

If you keep your cake covered while it comes to room temperature then the condensation will be on the cake keeper and not the cake.

If you absolutely HAVE to refrigerate your cake, make sure that when it comes out of the fridge, you cover it with saran wrap, a cake dome, etc (something that will cover the whole cake). As it comes to room temperature, the condensation will gather on the cover, and not the cake. If you take the cake out of the fridge and don't cover it, the cake will sweat (there is nothing for the condensation to attach to).

I've put my cakes in the fridge several times and really haven't had buttercream cakes "sweat" - I think it would happen if your fridge was REALLY cold and your house was REALLY hot..... but if your house temperature is fairly normal - meaning it's not raining, it's not very humid, etc..... then you shouldn't have any problems. I often cover my cakes w/ a cake dome though before I put them in the fridge - although I've not done that often too..... maybe you could make a tiny cupcake and test it out in your fridge first? To see if it sweats w/ the temperatures you house is right now? Good luck! I think you'll be fine!

I also don't refrigerate my buttercream and I use butter and crisco. Except like Ch0psuey said, I am going to keep it for a while! usaribbon.gif

Me neither...I use 1/2 butter, 1/2 shortening and I dont refrigerate except for keeping leftovers for while, its fine on the cake a few days.

If you use milk in your buttercream you will need to refrigerate it otherwise it is fine left out unless the temp is too hot.
