I need to do a birthday cake for my nephew's 6th birthday, but he's diabetic icon_sad.gif . I saw the recipes on here, but I was wondering if anyone else had some good ones or tried the one's on here. I need both cake and frosting recipes. He's a big chocolate fan. So anyones help would be greatly appreciated. Thank you, Kristen

The Splenda website is a good resource. People have very different opinions about low sugar desserts. some say it is "amazing", some think yuck.

Consider a chocolate cake with partial substitution of Splenda but use less that an equal substitution. If you sub 1/2 cup of regular sugar, use somewhat less than 1/2 cup Splenda.

Then use a light cool whip for icing. Something good with a little sugar is better than something bad with no sugar.
