Help With Wedding Cake

Hi everyone! I hope I'm in the right forum page. My friend is getting married in Sept. and I'm doing the cake for her. She had requested a Tres Leches cake with whipped cream and strawberry filling. The recipe I have is for a 9" pan - would I be able to double the recipe for a 16" without ruining the cake? Also, does strawberries and cream make the cake dry after sitting for a while with the fondant? And where do you get satin ice? The wilton fondant tastes like soap!!! Sorry to have so many questions....

Do you plan on stacking this cake? If so I would think you are going to need some serious support in place because tres leches is so light. I don't know where you are located but as far as whipped cream goes it does not hold up in heat - you will end up with it running off.

I have never attempted to put fondant over whipped cream - I am not sure it would work but maybe somebody will come along with a better idea. If you are not doing a huge cake then I would find a nice pan and do the cake in the traditional manner - leave it in the pan, top with whip cream and cherries. Not very "wedding" like but nobody ever said you can't have what you like!

(These charts gives batter requirements per pan (by size) how long to bake and at what temp. & more.)

If you're using 2" pans, you will see that a 9" round requires 5-1/2 cups of batter while a 16" round requires 15 cups of batter.

A filling of fresh strawberries & cream will not hold up as well as Rich's Bettercreme; although either will require refrigeration until serving because of the three milks.

Generally, fondant isn't used over whipped frosting because they break down.

Fondant over something as liquid as whipping cream would probably cause the fondant to break down.....
