So far just box or doctored box cake mix...I find it easier!

That being said.... I use really doctored box (the only thing that stays the same is the amount of oil!) because its easier and tastes good to me and my friends/family. I have one scratch recipe that I am working on and it is getting better thanks to tips on here! If I get it perfected I may add another to work on! ![]()
All of my basic cake flavors I offer are doctored box mixes. I also have specialty cake flavors and most of them are scratch family recipes - but some are also doctored box mixes that use higher priced ingredients or an odd ingredient that I only buy for that cake.
It is all personnal preference and you will find people who will argue box till they are blue in the face, and you will also find others who will argue scratch is the only way until they are blue in the face. I am one who can argue either way, I like my spot on the fence although it is starting to get a little uncomfortable on the bum.
I don't have a problem at all with doctored-mixes (some of my favorite recipes that I've developed are doctored cake mixes!), but as for selling cakes, I only sell scratch-cakes, unless someone requests a boxed-mix cake. I know that the people are paying me for the design/uniqueness of the cake, but I feel that I should be baking the cake from scratch considering how much money I'm charging them. But seriously, I am open to both - I LOVE the Cake Mix Doctor book...haha, but I have yet to sell a doctored-boxed cake to anyone.
