Cake Needed For Outdoor Wedding - Help Needed

A friend has just asked me if I would make her wedding cake. First, I've done lots of cakes before, but never a wedding cake (that shouldn't be an issue right?) Second, the wedding is at the end of August and both the ceremony and reception will be at the same outdoor venue. I assume that this means I will need to set the cake up around 2pm or so (guests arrive at 3:00) and that it will need to last until it's served as dessert. Does this timing sound right? My big concern is the weather. August in Toronto can be quite hot and humid. Will a buttercream cake last or will it melt?? Is there a particular type of buttercream recipie that would work best for this situation?? Also, what's your advice for the decoration part. Should that be done in buttercream as well or will royal icing work better? Help!

I posted my recipe for High Humidity Buttercream icing in the recipe section. It tastes great and hold up awesome in the heat and humidity. I have attached a pic of a cake I did as a test for CC'ers it sat out for 6 hours in the direct sunlight at temps of 98-101 degrees he cake was fine. The roses are from the same icing and they did not melt or droop at all.

Hi there!

I've only done one wedding as well, And the only reason I did it was, it was for the son of the owner of the company where my Dh works, I always send in little treats to his work & the couple had a taste of it & just had to have it at their wedding icon_rolleyes.gif
Anywho, couple of questions... Will the cakes be outside?
Should they be inside, you could make IMBC it's not dificult & it holds up really well....

This recipe is very similar to the one I use and I've had zero meltdowns in 25 years.

val, what a great idea to show the temp right next to the cake! You get an A++ in marketing for this idea!
