Hi Everyone! I have a quick question.. I have to cakes to make for the weekend.. I was wondering if I make them both friday and decorate saturday morning would they be ok for sunday?? Still fresh taste and everything???
what if I just wrap and not put in the freezer or fridge is that ok????
I would say they should definitely go in the fridge or freezer. I put mine in the freezer. I'd be a little hesitant to leave them out because they may dry out just sitting on the counter. Not sure though. Most people seems to freeze or refrigerate. I'm sure there's someone that can tell you about leaving them out.

Unless there is a filling that requires refridgeration, I never put my cakes in the fridge. I think it would be fine without refridgeration.
I have had a couple of cakes dry out in the fridge... even though tightly wrapped. I know freezing is fine.... the bakery I work at does it all the time. I read on a couple of baking websites (can't remember which ones) to NEVER put an unfrosted cake in the fridge.. I'm sure there are many different opinions on this. ![]()
I have been decorating cakes for 8 years now, and I have always baked on Friday and decorated on Saturday a cake needed on Sunday...NEVER refrigerated. It is ALWAYS still yummy, moist, and FRESH on Sunday. No refrigeration needed.
Waiting a day lets the cake settle getting most of the air out so it's actually better to wait a day to decorate. As long as you crumb coat it after it's cool, you should be fine.
If you are worried about a dry cake, try brushing it with a little apple juice to keep it moist prior to crumb coating. I do this w/ all my cakes and it doesn't change the flavor and makes them SO moist. Just a little on the top and sides is all it needs.
I have no roblem with it, but you need to know you recipes. Not all cakes are great for it.

Ditto....I bake one day, decorate the next, deliver the third day! I only refrigerate if there's a filling that requires it, which is nearly never!

The full story to this is to NEVER wrap WARM cakes in plastic wrap and put in the fridge, it makes a bacteria haven. Let them cool completely before wrapping and you can fridge your cakes. (unless maybe you were referring only to them drying out in the fridge?)
Somewhere along the line, it became a popular suggestion to wrap warm cakes and put them in the fridge to keep them moist. Turns out that traps heat and moisture and does not drop the temp fast enough to prevent icky things from going on in the cake.
