I'm purchasing a 5 lb container of Fondant and probably won't be using 3 lbs of it for a while. Can I keep it fresh for a period of time, or do I need to use it all up within a few weeks. How do I store it?

Just wrap it up tight and put the lid tightly on it. It should store for some time. Depending on how old it is most fondants have a 1 year shelf life.

Double bag it. Pretty much, when you open it, look how it was packed and do the same thing. The important thing here is that air doesn't get in or it will dry out. I use a foodsaver and that works great for me. It should also say on the container what its shelf life is. I think Satin Ice is one year.
