I was wondering if some of the users of Ateco (I believe) fondant work mats could advise me in choosing between the blue one or the other one with the grid. Can you use both to flip the fondant over the cake or just the blue one?
TIA

You can use either. I have both - a smaller blue on I use for rolling out and cutting smaller pieces of fondant on and the larger grid one for rolling out sheets of fondant. I did find that the larger one as a static factory for some reason but it works great otherwise. I do wish the grid extended the full lenght and width of the mat though.

I have the grid mat from Ateco and I'm very unhappy with it. It's hard to clean--it literally grabs the cloth and makes it hard to wipe. The surface, after 1 year, is also degrading. Little spots are developing where the "coating" is coming off--like paint peeling. I no longer roll directly on it, anyway. I put a piece of clear vinyl from Wal-Mart ($1.00) over it so that I can still use the grid. If I decide to replace it, I'll get the plain blue silicone mat.
